Tagliatelle Auch hier haben wir die österreichische Namensvariante gewählt, um euch beim Diktat der Einkaufsliste jede Art von Peinlichkeit zu ersparen. ​ Tagliatelle heißt auf italienisch soviel wie schneiden, was mich an ein Kindheitstrauma zurückerinnert, als Oma und Opa sogar die armen Spaghetti kleinstmöglich regelrecht zerfetzt haben. ​ Jedenfalls sind Tagliatelle eine Art von Bandnudeln, womit sich der Kreis auch schon wieder schließt. In der Emilia-Romania zählt sie zur klassischen Pasta. Sobald die ca. 7,5mm breite, flache Nudel etwa einen halben Meter lang aus der Messingmatrize gepresst wurde, hängen wir jede Nudel einzeln händisch (und deshalb ja auch der Name Manufaktur) zum Trocknen auf. ​ Sie ist gemeinsam dann mit ihren Freunden als Pasta am Teller serviert, die ideale Partnerin für dicke Saucen bei Rind-, Kalb-, oder Schweinefleischgerichten. Sein Sohn hatte, aus mir völlig unbegreiflichen Gründen, eine Stricknadel der Großmutter parat und wickelte den abgestürzten Teig um diese (um die Stricknadel, nicht um die Großmutter, denn sonst wären die Spiralen wohl kein Renner geworden). ​ Ob der Lebensmittelinspektor das mitbekommen hat, warum die Oma in der Küche gestrickt hat und ob der Herzog vom vorangegangenem Bodenkontakt der Spiralnudel vor dem Verzehr informiert worden ist, wurde nicht überliefert.
